During my recent grocery shopping I was delighted to come across purple carrots. They actually have blackish hue and are not at all enticing. Nevertheless I bought some. When peeled, it has a beautiful pinkish-purple colour. I decided to make halwa and it was simply out-of-this-world !! I added jaggery instead of sugar to make it more nutritious and followed similar process as that for red carrots, omitting the grated coconut. You may check the Recipe Here.
