This soup is simple to make, but it is so aromatic and tasty. Try it and start the New Year on a healthy note. River Spinach is also known as kangkong. If this is not available, you may use your favourite leafy greens.

400g lotus stem, peeled, trimmed, cut into ¼-inch thick roundels, washed and rinsed with lime water
4-6 garlic cloves, peeled and finely chopped
220g River Spinach, trimmed and rinsed
Salt to taste
Ground black pepper to taste
- Place the lotus stem, garlic and 3 cups/750ml water in a saucepan and bring to a boil.
- Reduce the heat and simmer for 10 minutes.
- Add the spinach and cook for a further 8-10 minutes.
- Remove from the heat.
- Add salt and black pepper to taste.
- Serve hot.
