Carrot & Cucumber Salad with Quinoa

Toasted quinoa is used to garnish this simple salad. The quinoa imparts a delicious crunchiness and nutty flavour to the salad.

Carrot Salad

SERVES 4

Ingredients

1 medium cucumber, peeled and finely chopped

1 medium carrot, peeled and finely grated

1 fresh green chilli pepper, finely chopped

2 teaspoon freshly squeezed lime juice

2 tablespoons finely chopped spring onions

Salt to taste

3 tablespoons quinoa

 

Method

  1. Combine all the ingredients except the quinoa in a medium bowl and mix.
  2. Place the quinoa in a small pan over medium-low heat and stir until it begins to splutter. Remove from the heat.
  3. Add to the rest of the ingredients and mix.
  4. Serve immediately.
