This is an excellent summer coolant. Red chilli powder imparts a tasty kick that is balanced beautifully with the tangy flavour of amchur powder.
20g fresh mint leaves, plus extra to garnish
¼ cup/65ml freshly squeezed lime juice
Sugar to taste
¼ teaspoon salt, or to taste
½ teaspoon red chilli powder, or to taste
3 teaspoons amchur powder, or to taste
1. Place 3 cups/750ml water in a jar. Add all the ingredients. Stir to combine.
2. Refrigerate until chilled.
3. When ready to serve, strain the liquid through a fine sieve into glasses. Serve garnished with mint leaves.
