Light, fresh and pretty, this is quick and easy to make and requires minimal cooking.
1 medium green apple, diced and mixed with 1 tablespoon lime juice
1 cup finely chopped red cabbage, rinsed, drained and patted dry with a kitchen paper
1 medium yellow bell pepper, seeded and thinly sliced
1 medium onion, cut into thin rings
1½ cups peeled and seeded watermelon cubes
3 tablespoons finely chopped fresh mint leaves
1 tablespoon olive oil
Salt to taste
Freshly ground black pepper to taste
Freshly squeezed lime juice to taste
200g firm tofu, steamed for 5 minutes and cooled to room temperature
- Combine all the ingredients, except tofu, in a salad bowl.
- Taste and correct the seasoning if necessary.
- Add the tofu, gently crumbling it with your fingers. Toss to combine and serve immediately.
