Jackfruit Seed Tikki

A good source of dietary fibre, proteins and minerals, jackfruit seeds are commonly used to make an array of delicious dishes in South India. This recipe is an adaptation of Aloo(potato) Tikki, a popular Indian street food. The result is incredibly tasty and the breadcrumbs impart a nice little crunch. Serve this as a snack.

400g jackfruit seeds, boiled, peeled and coarsely mashed
2-3 fresh green chilli peppers, finely chopped
1 teaspoon ginger-garlic paste
¾ teaspoon ground cumin seeds
1 small onion, finely chopped
1 tablespoon finely chopped fresh coriander leaves
½ teaspoon turmeric powder
1 teaspoon salt, or to taste
Freshly squeezed lime juice to taste
1 cup breadcrumbs, plus extra for dusting
Vegetable oil for shallow frying

1. Mix all the ingredients, except the vegetable oil, in a bowl to form a lump of soft dough.

2. Divide the dough into 15 equal portions. Shape each portion into a ball and slightly flatten it between your palms.

3. Dust the flattened dough balls lightly with the breadcrumbs, gently shaking off any excess. Then, shallow-fry them in batches until golden brown on both sides.

4. Serve hot with tomato ketchup or your favourite dip.
