This luscious summer cooler makes a great treat at any time of the day. It contains nutrients that help to calm and lift the spirits. Sip it slowly and savour each mouthful.
For Strawberry Smoothie (first layer):
1 banana, peeled, chopped and frozen
12-15 large fresh strawberries (about 250g), rinsed and frozen
1/4 cup/65ml cold low-fat milk
1/2 cup/50g instant oatmeal
1-2 teaspoons honey, or to taste
1/2 teaspoon vanilla extract
For Mango Smoothie (second layer):
1 medium ripe mango, peeled, chopped and frozen
1/4 cup/65ml cold low-fat yoghurt
2 tablespoons freshly squeezed orange juice
For Blueberry Smoothie (third/top layer):
1 cup fresh blueberries (about 125g), rinsed and frozen
1/8 cup/30ml cold low-fat milk
1/8 cup/30ml cold low-fat yoghurt
1 teaspoon honey, or to taste
1/2 teaspoon ground flax seeds, plus extra flax seeds to garnish (optional; see Note)
Place 4 tall glasses in the refrigerator to chill.
Make the Strawberry Smoothie:
Using an electric blender, blend all the ingredients until smooth and creamy. Divide and pour into the glasses, and place the glasses in the refrigerator.
Make the Mango Smoothie:
Rinse the blender. Combine all the ingredients in the blender and blend until smooth. Divide and pour into the glasses, and place the glasses in the refrigerator.
Make the Blueberry Smoothie:
Rinse the blender. Combine the blueberries, milk, yoghurt, honey and ground flax seeds (if using) in the blender and process until smooth. Divide and pour into the glasses and garnish with flax seeds, if using. Serve immediately.
Note: If you are not used to flax seeds, begin with small amounts. They are very high in fibre and can cause diarrhoea and cramping.
