Italian Linguine Pesto

This pasta dish is made with homemade pesto sauce. It’s simply delicious!



Serves 4 to 6


500g linguine
Salt to taste

For the sauce:
90g sweet basil leaves, rinsed
3 cloves garlic, peeled and crushed
1/3 cup/85ml olive oil
1/3 cup /55g pine nuts, toasted
½ cup/50g freshly grated Parmesan cheese

Follow the instructions on the package and cook the pasta in a large saucepan of boiling salted water until al dente.
Meanwhile, make the pesto sauce. Using an electric blender, make a smooth paste of the sweet basil leaves, garlic cloves and pine nuts, adding the olive oil. Transfer the paste to a bowl. Add the cheese and mix well.
Drain the cooked pasta and return to the saucepan. Add the sauce and toss well to coat the pasta evenly. Taste and adjust the salt. Serve hot.
