Russian Borscht Soup

This is a classic stunning soup that will complement any meal.

Russian Borscht Soup

Serves 6-8


1 medium onion, chopped
1 clove garlic
1 medium beetroot, peeled and chopped
1 carrot, peeled and chopped
3 celery sticks, chopped
1 red bell pepper, chopped
1 apple, cored and chopped (use any variety of apple)
6 cups/1.5litres water
1 teaspoon cumin seeds
Fresh lime juice to taste
Freshly ground pepper to taste
Salt to taste
1 tablespoon finely chopped coriander leaves

Place all the ingredients, except the coriander leaves, in a large pan. Bring the mixture to a boil. Turn down the heat to a gentle simmer. Cook until the vegetables are tender.
Strain the vegetables and reserve the liquid. Once the vegetables have cooled down to room temperature, process them in a food processor until smooth and creamy. Transfer to the pan. Add the reserved liquid and reheat. Check the seasoning.
Divide into individual serving bowls. Garnish with coriander leaves. Serve hot.
